Ingredients

for dough:

  • 2 cup wheat flour
  • ¼ tsp salt
  • 2 tbsp oil
  • water(for kneading)

for aloo stuffing:

  • 3 boiled aloo/potatoes (mashed or grated)
  • 1 onion (finely chopped)
  • 2 green chilli (finely chopped)
  • 1 tsp grated ginger
  • ¼ tsp ajwain /carom seeds
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • 1 tsp chaat masala
  • ½ tsp red chilli powder
  • salt 
  • ½ cup fresh coriander leaves (finely chopped)

Instructions

Kneading Dough

  1. firstly, in a large bowl take 2 cups of wheat flour and ¼ tsp salt. mix well.
  2. make a well in the centre. Add 2 tsp oil and water as required.
  3. now bring the mixture together and knead into a smooth soft dough.
  4. grease oil and cover the dough. 
  5. keep the dough aside for 20 minutes.

Making Potato Stuffing

  1. first, mash the potatoes with a potato masher. There should be no small pieces in it.
  2. now add chopped onion, chopped green chilli, grated ginger, chopped fresh coriander leaves.
  3. also add cumin powder, coriander powder, red chilli powder, chaat masala and salt.
  4. mix well and make sure all the ingredients are well combined. Check the taste and add more salt or any spice powder as per your taste. 

Making Aloo Paratha

  1. after resting the dough for 20 minutes, knead a little.
  2. now pinch a ball-sized dough and roll it into about 4 inches in diameter.
  3. place a ball-sized prepared aloo stuffing in the centre.
  4. then make pleats and bring all the edges on top.
  5. join the pleats together and pinch off the excess dough.
  6. sprinkle some wheat flour and roll out a little thick.
  7. place the rolled paratha on the hot Tawa and cook for a minute.
  8. when the base is partly cooked, flip the aloo paratha using a spatula.
  9. brush some ghee/oil on the partly cooked part. Flip again once or twice till both the sides are cooked properly.
  10. serve hot aloo paratha with some extra butter, sauce, raita or pickle.
