A traditional Assamese mashed potato dish made with mustard oil, onions, and green chilies.

Ingredients

  • 3 to 4 medium-sized potatoes
  • 2 tablespoons mustard oil (adjust to taste)
  • 1 medium onion (finely chopped)
  • 2 to 3 green chilies (chopped)
  • Salt to taste
  • Fresh coriander leaves (finely chopped)

Instructions

  • Wash and peel 3 to 4 medium-sized potatoes.
  • Boil them in salted water until they’re soft but not falling apart.
  • Drain and let them cool slightly before mashing.
  • Place the boiled potatoes in a large bowl. Add chopped onions, green chilies, coriander leaves, mustard oil and salt.
  • Mash them using your hands or a spoon until smooth but still a little coarse.
  • Taste and adjust salt or chilies as needed.
