Ingredients

  • ¾ cup badam / almonds
  • 1 cup hot water
  • ¾ cup sugar
  • ½ cup water
  • 2 tbsp saffron milk
  • 4 cardamom / elachi (powdered)
  • 2 tbsp ghee

Instructions

  1. firstly, in a large bowl soak almonds in hot water for 1-2 hours.
  2. Drain the water and peel the almonds.
  3. Grind the almonds in a food processor or blender until they become a fine paste.
  4. Combine the saffron and warm milk in a small bowl, mix well and keep aside.
  5. Heat the ghee in a non-stick pan, add the almond paste, mix well and cook on a slow flame for 4 minutes, while stirring continuously.
  6. Add the saffron milk, sugar and cardamom powder, mix well and cook on a slow flame.
  7. Cook on low heat, stirring continuously, until the mixture thickens and forms a soft dough.
  8. Pour the dough into a greased tray and flatten it with a spatula.
  9. Allow the mixture to cool for 30 minutes.
  10. Cut the badam barfi into small squares or diamond shapes.
  11. You can also decorate with silver leaf / silver vark.
  12. Serve and enjoy.
