Ingredients

For Ginger Bread Cupcakes

  • Unsalted butter – 100 grams
  • Brown sugar – 150 grams
  • Curd – 110 grams
  • Vanilla essence – 1 teaspoon
  • Molasses – 2 tablespoons
  • All-purpose flour – 180 grams
  • Baking powder – ½ teaspoon
  • Baking soda – ¼ teaspoon
  • Cinnamon powder – ½ teaspoon
  • Clove powder – ¼ teaspoon
  • Nutmeg powder – ¼ teaspoon
  • Dry ginger powder – 1 teaspoon
  • Salt – ⅛ teaspoon
  • Milk – 250 milliliters
  • Vinegar – ½ teaspoon

For Cream Cheese Frosting

  • Unsalted butter – 100 grams
  • Powdered sugar – 150 grams
  • Cream cheese – 100 grams
  • Vanilla essence – ½ teaspoon
  • Caramel sauce – 2 tablespoons

For Decoration

  • Sugar man
  • Sugar leaves
  • Sugar star
  • Sugar tree

Instructions

  1. In a mixing bowl, add 100 grams of unsalted butter and whisk until light and frothy.
  2. Add brown sugar and whisk until well combined.
  3. Mix in curd, vanilla essence, and molasses. Whisk until smooth.
  4. Add all-purpose flour, baking powder, baking soda, cinnamon powder, clove powder, nutmeg powder, dry ginger powder, and salt. Mix gently.
  5. Pour in milk and vinegar. Whisk until a smooth batter forms.
  6. Divide the batter evenly into cupcake moulds, filling each about ¾ full.
  7. Preheat the oven to 356°F / 180°C and bake for 25–30 minutes or until a toothpick inserted comes out clean.
  8. Remove cupcakes from the oven and allow them to cool completely.
  9. In a bowl, whisk unsalted butter and powdered sugar until creamy and smooth.
  10. Add cream cheese and vanilla essence. Whisk until light and fluffy.
  11. Pipe or spread cream cheese frosting over the cooled cupcakes.
  12. Drizzle caramel sauce on top.
  13. Decorate with sugar man, sugar leaves, sugar star, and sugar tree as desired.

Notes

  • Serve these Ginger Bread Cupcakes at room temperature with hot coffee, spiced tea, or warm milk for a cozy treat.
